Diabetes Friendly Recipe-Tex-Mex Ground Beef Skillet

Our Tex-Mex Ground Beef Skillet recipe is an easy and delicious recipe to help you follow your diabetes meal plan.

Tex-Mex Ground Beef Skillet

Prep time: 10 minutes
Serves 4; serving size: 1 1/2 cups

3/4 lb extra lean ground beef round
1 medium green pepper, seeded and diced
1 large celery stalk, sliced
1/2 cup mild salsa
3/4 cup water
1 cup frozen corn kernels
1 cup canned chickpeas, washed and drained
1 1/2 tsp chili powder
1/4 tsp salt
1/2 cup uncooked quick-cooking rice
3/4 cup shredded fat-free Cheddar cheese


  1. In a large nonstick skillet, cook the beef, green pepper, and celery over medium heat, stirring frequently, until the beef is browned, about 6 to 8 minutes.
  2. Add salsa, tomato, water, corn, chickpeas, chili powder, and salt. Cover and bring to a boil. Reduce the heat, and simmer 10 to 12 minutes stirring occasionally.
  3. Bring to a boil. Add the rice, and stir it into the sauce. Cover, remove the pan from heat, and allow to sit until the rice is tender, about 5 minutes.  Sprinkle on cheese and stir into mixture.

Patients with diabetes may receive services from two board certified endocrinologists; a registered nurse; and a registered dietitian with certification in diabetes education (CDE). The Center offers treatment, nutrition and medication education, support and glucose monitoring for patients and support services for family members.
